Birthday cake for a Special Bear

My cousin requested a special birthday cake for her bf.. So I was left to create a cake based on these elements..he's addicted to Apples.. apple gadgets that is,,he loves his dog, and lurves arowana fish or dragon fish.. one problem that I had was.. I ran out of rolled sugar fondant, and had to work with that I whatever amount that I have.. so... I decided to mix buttercream and fondant...
Well, for those of you who bake,, you know how fondant reacts to buttercream.. but the almond flakes really saved the dayyy... & here goes the cake... ^^

I ♥ Bali!

When in Bali, I'd highly recommend this plc..Di Mare @ Karma kandara. It takes sometime to get there by car..but the long drive is soo worth it.. u'd be taken by an elevator down to the beach side, where there's this lounge/hut.. it's simple yet comfortable, unpretentious.. purely cozy..
They have great music, great cocktails and breathtaking view...

Powerpuff gals & slumber party..

Baking session is back.. This time we are baking with Splenda..
My dear baker friend's husband has diabetes, while the rest of us were just cutting down on sugar. ;P I can't say baking with sugar substitute doesn't affect the taste or texture of the cake, but I find that Splenda has the least aftertaste compared to other brands out there, plus the idea of having "0 calorie" of sugar in my cake doesn't stop to put a smile on my face.

easter baking

I wonder how bunnies first got associated with Easter. But anyway, they are way too cute not to be included.
This was my first layer mini cakes.. I wanted to make those little pretty cakes you find in hotels for high tea.. or so was my approach.. ;P I have to constantly remind myself that I have extremely limited skills in cake decorating, I did not go to culinary school nor had any pastry making classes..So, I'd better keep it simple..and baked these japanese sponge cheesecake.. layered with lemon curd cream..

The lemon curd cream was accidental, I first wanted to combine the japanese cheesecake with light vanilla custard. but somehow.. I find egg yolks from the custard overshadowed the cheese flavor.. so in the bin they go..
After flipping through my baking recipe books.. I found this yummy recipe for lemon curd.. yet I wanted a fluffy,creamy,fragrantly fruity and light flavored filling.. after adding cream and a few other ingredients.. I was happy with my lemon curd cream recipe discovery.. ^^ *slurp*
